when i bought a 4x4 a couple years ago this course was recommended to me by a LR mate:

http://www.myerscough.ac.uk/?page=course-search&action=factsheet&reference=09XXORDMYS02P&query=&html-title=Introduction%20to%20Off%20Road%20Driving

they're  running another in feb near preston, tbh it's the best £90 i've spent.
If you're new to off road driving, or want to learn the correct techniques for 4x4 operation before you give it a go I'd recommend. it covers a bit of theory,a bit of driving, then you get your lunch and another few hours tuition, all in your own vehicle.
when i did it there were 3 cars (all lr) and 1 instructor. most things were covered (ascending/descending/side slopes/x axle/ fording), all on a small purpose built site.

IMO it's better learn the basics properly in a day on a non-damaging course in a friendly environment than to learn from your mistakes at a pay&play or out laning.

Driving is the most dangerous thing that we do. This basic driver training is an excellent choice for those who want the best in defensive driving instruction. New drivers can be anything from overconfident to sown right scared. But no matter what the state of the student is, a good instructor will be able to refine his acknowledges and get him on the road.
